Wow, I saw a slightly different trick, where you hold the bottle differently, and the bottom comes clean off. That one smashed but I did it once with a Monteith’s Radler Bier, I’ll admit that once was the only time I did it though.
It’s called cavitation. It’s not the air pressure but in fact is caused when the hand hits the bottle, which forces it down. The speed ends up leaving the water still up in the air for a fraction of a second when when it catches up all comes crashing down to the bottom of the bottle and blowing it out.
