beer or lager can be brewed at home using malt extract, hops and yeast. most people add sugar too. You should be able to produce a beer which is better than the average commercial brew but not as refined as the best ones.

It is necessary to find a supplier of home-brew ingredients. You are unlikely to get the malt, hops and correct yeast anywhere else.

My general method is

boil hops and malt together in a gallon of water for an hour
strain into a big plastic container, add another gallon of water
mix in some sugar
leave to cool
sprinkle the yeast on top.

for a week the yeast does its work, converting sugars to alcohol.

I siphon the beer into a big container, leaving the muddy yeast residue behind

leave this to stand for three or four weeks, until it clears

siphon into pint (1/2 liter) bottles which have 1/2 a teaspoon of sugar at the bottom. fit caps and leave for at least 2 weeks.

A homebrew supplier will let you know the exact recipe.

The problem you may have is air temperature, 16 to 20 degrees C is good for the brewing stage, if you are in a hot country then the beer may brew too quickly, with a loss of quality.

The two above posts are pretty much what you need to know and where you need to get it. Try buying the book Clone Brews – though I am not sure that it has Castle Lager, it does contain a lot of recipes designed to produce a clone of many commercial brews. Or you can Google “Clone Castle Lager” and see what recipes turn up….

I get the impression that you are new to homebrewing. If so, do NOT start with a lager. Ales are more forgiving. As a starting point, I would suggest reading Papazian’s book New Complete Guide to Homebrewing. Read it. Follow the instructions as if your beer depended on it. It does. Once you feel comfortable with ale, you can try lagers.

As far as cloning Castle lager goes, there are a number of clone books on the market. Even Papazian wrote one. You might also want to ask on craigslist.com. Their homebrew forum is #1855 and the beer forum, #2337. Remember those numbers; those forums do not appear on the forum list.

You could try this book –
Don’t know if it has Castle but there are hundreds of recipes and many clones.
